Healthy pancake recipe for a sweet-toothed weekend
The weekend is almost here, and that means blanket-and-movie time — but what about something sweet? That's where our weekly dilemma lies. We have the time, and the craving, to indulge our sweet tooth, but we don't want to spend the whole week regretting a binge on "junk". So today we've decided to roll up our sleeves and bring you a super easy, healthy recipe that will satisfy our sugar cravings, we promise.
Ingredients:
4 eggs, free-range if possible.
2 very ripe bananas, the kind you don't really fancy eating and end up letting go bad in the fruit bowl.
½ tablespoon of cinnamon.
45 g of oat flour.
3 tablespoons of ground almonds.
2 teaspoons of vanilla essence.
½ tablespoon of baking powder.
And finally, a topping to add on top once they're done. Remember, these are healthy pancakes, so don't go ruining it all at the end with a big spoonful of chocolate spread.
Preparation:
First, we peel the bananas, cut them and put them in a bowl to mash them with a fork. Once they're well mashed, we add the 4 previously beaten eggs and mix all the ingredients together well. Next, we add the oat flour, the cinnamon, the vanilla essence, the baking powder and the almonds, and stir the mixture well until it forms a more or less smooth, even batter.
Meanwhile, we heat a little knob of butter in a frying pan, and once it has melted and spread across the whole surface of the pan, we pour in a ladleful of our pancake batter. We wait for small bubbles to form before flipping it, and cook it on both sides. We'll repeat the process until we run out of batter and that's it! Drizzle a little honey, some chopped fruit, or a few pure chocolate chips on top and you'll have your sweet snack ready.
